Dietary intolerances

Lactose

The terms “allergic to milk” and “lactose intolerant” are often used incorrectly, creating confusion. Lactose intolerance is defined as a series of symptoms which may manifest as an inability to digest lactose. A food allergy, on the other hand, is a reaction by the immune system, usually to a protein. Cows’ milk is one of the most common allergens. In Italy today, 4.2 million people say they have problems with lactose; of these, 2.8 million “only” have digestive problems, 1.1 million are intoler-ant and 305,000 are actually allergic. Our products with low-lactose cheese are suitable for all, particularly those with lactose intolerance.

Yeast

Food intolerances and allergies are increasingly common, and that’s why Antica Cucina Bio created a valid alternative to conventional baked goods. Many leavened products were originally yeast-free, and we all know that yeast-free foods are easier to digest. By combining organic ingredi-ents and our knowledge of making bread without yeast, we’ve created a range of products that are healthy, tasty and natural. They are baked at medium to low temperature to preserve the properties of the ingredients and make them more digestible.
